HD-SDI Cameras coverted to SBS For 5.6" Display

I want to use two HD-SDI 60 fps cameras in to the Matrox MC-100 Dual SDI to HDMI Mini Converter and display the side by side HDMI output on a 5.6" display with optics like the DIY Oculus Rift uses.....all built in to a set of goggles with headset.
Is 60 fps fast enough to avoid latency / jitter problems?
Does anyone know of any other hardware or OEM boards that will convert two video inputs (SD or HD-SDI) to a SBS HDMI output?
The MC-100 is reportedly a very hot processor and quite large for encasing in a set of goggles.
I have searched for 2:1 screen splitter ICs and have not found anything that doesn't require processor level programming skills.
If I were to put an OSD in line with the video source should it go on the output or one of the inputs (L/R)?
