While it could in theory be used to take 3d images/video there are far more low cost solutions like the minoru3d that already do that out of the box. However, I do envision somethng like this, where you have such cameras from many angles, being used to instantly snap full 3d models of humans/objects.

2-4 of them could probably make a pretty accurate textured volumetric model out of most objects without a ton of computational work and little-no human touching up.

If you've already got a camera and a projector you can scan 3D objects without buying a Kinect device. The technique used in the Kinect has existed for at least 10 years, it's called structured-light 3D scanning.

Yes, probably easier since you don't need a calibration step, but that easiness has a cost : $150.
